1 Garlic Clove
1/4 Onion
8oz Monterrey Jack Cheese
1 Tbsp. Vegetable Oil
2 Carrots
3 Zucchini
2 Russet Potatoes
3 Large tomatoes
Ingredients
In a large pot, heat the oil in a medium - low heat.
Peel the potatoes and carrots and cut into small cubes. Cut the zucchini into small cubes and cheese as well and save for later.
Blend the tomatoes with the garlic and onion, then add it to the pot with the hot oil to fry it a little bit. (Do not rinse the blender as we'll need the contents).
After a minute, fill the blender with 2 - 3 cups of water and make sure you get the remaining residue, and add to the pot.
Add the potatoes and carrots as they take the most time to soften, cook for 15 minutes.
Add the zucchini and cheese, bring to a boil and lower the heat to a low simmer to not burn the cheese. Cook for 25-30 minutes or until the potatoes and carrots have softened.
